About this Recipe
This is a perfect recipe for those on a diet. Better to taste it for lunch, taking protein for dinner. Usually in the controlled diets 1 meal of oil is calculated per meal and in fact among the ingredients you find only 2 tablespoons of oil (the recipe is for two person).
Spices are very useful for flavoring dishes without adding calories: instead of serving boiled rice with boiled broccoli, you can enjoy a nice and good dish to eat. Because the eye wants its part too!.
the vinaiolo’s pairing
A Pinot Noir, variegated variety that is vinified in white and red. In this case the red version is better, delicate on the nose with hints of berries and flowers and interesting in the mouth with the wild strawberry that stands out on the other red fruits approaching curry and broccoli gracefully.
- 500g of broccoli
- 140g of parboiled black rice
- 2 tablespoons of extra virgin olive oil
- 1 teaspoon of curry
Boil the black rice in a saucepan for about 20 minutes. Meanwhile wash the broccoli, divide them into small florets and leave them in abundant salted water for about 20 minutes. Drain the rice, season with 1 tablespoon of oil and keep it warm in the saucepan.
Drain the broccoli as well, shake it reducing it to cream, add the curry, season with salt and blend again. Finally add the remaining oil and turn the blades one last time.
Serve the hot black rice with the broccoli cream side by side, sprinkling, if desired, with a little more curry.
