If you want, you can replace half of the dark chocolate with milk chocolate: in this case, however, decrease to about 200 g the quantity
of sugar.

The brownies can be enriched in various ways: with classic walnut kernels, with delicious marshmallow (better if small ones, if you find them), with chocolate chips (two colors) and with almonds or peanuts praline.

If you do not have the potato starch and you are not allergic to gluten, you can replace the starch with the same amount of flour 00, otherwise you can also use the cornstarch. 


  • 200g dark chocolate
  • 200g butter
  • 250g sugar
  • 5 eggs
  • 5 tbsp potato starch
  • 1 tsp baking powder

Melt the chocolate with the sugar and the butter in a bowl on a double boiler or in the microwaves. Add eggs, one by one, and complete with the potato starch sifted with the baking powder.

Pour the batter in a 20 x 30 cm rectangle mold and bake at 190° for 30 minutes. Try to put a toothpick in the center of the dough, and if it comes out clean it means the cake is done. Otherwise continue the cooking for other 10 minutes.

Leave to cool the dough in the mold, then cut it in squares and leave the brownies to cool completely on
a wire rack.
